GRILLED VEGETABLE SANDWICH
Preparation Time: 15 minutes Cooking Time: 20 minutes
1/2 red or yellow pepper, sliced
1/2 zucchini, thinly sliced
1/2 red onion, thinly sliced
1 large tomato, thickly sliced
1 1/2 tbsp extra virgin olive oil
2 pieces white bread (toasted)
Olives and Fresh Basil to garnish
Cheese (if you wish)
1. Preheat grill to high and line with foil. Place pepper, zucchini, onion, and tomato in a bowl. In a small bowl, whisk together 1 tbsp of oil and black pepper then pour over vegetables and toss gently to coat.
2. Spread vegetables onto grill rack and grill for 3-4 minutes on each side, until lightly browned. Set aside and keep warm.
3. Toast bread on both sides and rub garlic halves over on one side. Divide the vegetables between the toast slices, garlic side up. Top with remaining olives and drizzle with remaining oil. Garnish with basil and serve.
